In Kyushu, especially in Kumamoto prefecture, it is customary to eat raw horse meat, which is called "Ba-Sashi".

This is frozen lean meat and meat on the neck called Koune.

Cut into thin slices and eat with sweet soy sauce, ginger and Japanese ginger.

It is delicious.
