"Hegi-soba" is a soba noodle with roots in the Uonuma region of Niigata prefecture.
It is a soba noodle that uses seaweed called "Funori" (Gloiopeltis) for the soba noodles.

The origin of the name "Hegi" is that the name of the bowl with soba was "Hegi".
"Hegi-Soba" is characterized by a smoother texture than other soba noodles.

I like this soba, and I used to eat it as breakfast on my way to work.
