I searched for a restaurant because I wanted to eat a dish of roasted chicken skin.

  • I use chicken neck skin.
  • Slowly bake to remove oil.
  • Soak in sauce overnight, bake again, and let it age for a day.
  • Before eating, bake again and the surface is crispy. The inside has a chewy texture.
